Serve four
Ingredients
1 small swede (1/2 a swede from PMV)
50 gms fresh brown or white breadcrumbs
1 tbsp plain flour
½ tsp paprika
½ tsp ground coriander
½ tsp ground cumin
Pinch of cayenne pepper
1 egg, beaten (Nickie’s Eggs)
Salt and freshly ground pepper
Oil, for deep frying
Chutney of your choice to serve.
- Peel the swede, cut in half and slice thinly. Cook in a pan of boiling water for 3 – 5 minutes until just tender. Drain well.
- Mix together the breadcrumbs, flour, and spices, pepper, and salt. Dip the swede slices first in the egg and then in the breadcrumb mixture.
- Heat the oil in a deep fryer or wok and fry the swede discs, in batches if you need to.
- Drain on kitchen paper to absorb the oil and serve with chutney.
Cooks tip. Fry the discs until the swede is tender, so that the crunchiness of the breadcrumb’s contrasts with the soft vegetable.
